金华酥饼”(jinhua flaky pastry)色泽金黄,香脆可口,是浙江省金华著名点心。有趣的是首创者竟是“混世魔王”程咬金。 jīnhuásūbǐnɡsèzéjīnhuánɡ,xiānɡcuìkěkǒu,shìzhèjiānɡshěnɡjīnhuázhùmínɡdiǎnxīn。yǒuqùdeshìshǒuchuànɡjìnɡshì“hùnshìmówánɡ”chénɡyǎojīn。 位列唐朝(tang dynasty)二十四位开国元勋之一的程咬金,早年在金华卖烧饼为生。有一次,他的烧饼做得太多了,一整天也没卖完。他便将饼保存起来,准备明天继续卖。可 wèiliètánɡcháoèrshísìwèikāiɡuóyuánxūnzhīyīdechénɡyǎojīn,zǎoniánzàijīnhuámàishāobǐnɡwéishēnɡ。yǒuyícì,tādeshāobǐnɡzuòdehěnduōle,yìzhěnɡtiānyěméimàiwán。tābiànjiānɡbǐnɡbǎocúnqǐlái,zhǔnbèimínɡtiānjìxùmài。kè 是,如果烧饼变坏,就不能卖了。于是,为了防止烧饼变坏,程咬金将烧饼统统放在炉边上。他想:让火一个劲地烘烤着,烧饼一定坏不了啦!第二天,程咬金起床一看,烧饼里的 shì,rúɡuǒshāobǐnɡbiànhuài,jiùbùnénɡmàile。yúshì,wèilefánɡzhǐshāobǐnɡbiànhuài,chénɡyǎojīnjiānɡshāobǐnɡtǒnɡtǒnɡfànɡzàilúbiānshànɡ。tāxiǎnɡ:rànɡhuǒyíɡejìndìhōnɡkǎozhe,shāobǐnɡyídìnɡhuàibùliǎolɑ!dìèrtiān,chénɡyǎojīnqǐchuánɡyíkàn,shāobǐnɡlǐde 肉油都给烤出来了,饼皮更加油润酥脆,全成了酥饼(sūbǐnɡ flaky pastry)。这饼一上市,立刻吸引了不少人。大家见程咬金做的饼和以前大不一样,都争先恐后地品尝。程咬金 ròuyóudōuɡěikǎochūláile,bǐnɡpíɡènɡjiāyóurùnsūcuì,quánchénɡlesūbǐnɡ。zhèbǐnɡyíshànɡshì,lìkèxīyǐnlebùshǎorén。dàjiājiànchénɡyǎojīnzuòdebǐnɡhéyǐqiánbúdàyíyànɡ,dōuzhēnɡxiānkǒnɡhòudìpǐnchánɡ。chénɡyǎojīn 很高兴,便扯着嗓子喊:“快来买呀!又香又脆的酥饼 (flaky pastry)!”这一叫,买的人更多了。人们争夸程咬金的手艺越来越高超了。有的烧饼铺主人还煞有介事地向程咬金请 hěnɡāoxìnɡ,biànchězhesǎnɡzihǎn:“kuàiláimǎiyà!yòuxiānɡyòucuìdesūbǐnɡ!”zhèyíjiào,mǎiderénɡènɡduōle。rénménzhēnɡkuāchénɡyǎojīndeshǒuyìyuèláiyuèɡāochāole。yǒudeshāobǐnɡpùzhǔrénháishàyǒuqíshìdìxiànɡchénɡyǎojīnqǐnɡ 教“秘方”(mìfānɡ secret recipe)。程咬金哈哈大笑起来,说:“我哪有什么秘方(mìfānɡ secret recipe)呀!只不过在炉边烤一夜而已。”随后程咬金将烧饼再加以改进,制 jiào“mìfānɡ”。chénɡyǎojīnhāhādàxiàoqǐlái,shuō:“wǒnǎyǒushénmemìfānɡyà!zhǐbúɡuòzàilúbiānkǎoleyíyèéryǐ。”suíhòuchénɡyǎojīnjiānɡshāobǐnɡzàijiāyǐɡǎijìn,zhì 出的酥饼圆若杯口,形似蟹壳,面带芝麻,两面金黄,加上干菜肉馅之香,更有特殊风味了。 chūdesūbǐnɡyuánruòbēikǒu,xínɡsìxièké,miàndàizhīmá,liǎnɡmiànjīnhuánɡ,jiāshànɡɡāncàiròuxiànzhīxiānɡ,ɡènɡyǒutèshūfēnɡwèile。 后来程咬金参加了隋末农民大起义,在瓦岗寨当上了寨主“混世魔王”,进而成了唐王朝开国元勋。他功成名就之后,忘不了早年的卖饼生涯,便极力推荐该小吃。“金华酥饼”更 hòuláichénɡyǎojīncānjiālesuímònónɡmíndàqǐyì,zàiwǎɡǎnɡzhàidānɡshànɡlezhàizhǔ“hùnshìmówánɡ”,jìněrchénɡletánɡwánɡcháokāiɡuóyuánxūn。tāɡōnɡchénɡmínɡjiùzhīhòu,wànɡbùliǎozǎoniándemàibǐnɡshēnɡyá,biànjílìtuījiànɡāixiǎochī。“jīnhuásūbǐnɡ”ɡènɡ 随首创者的名气而名扬四海。 suíshǒuchuànɡzhědemínɡqìérmínɡyánɡsìhǎi。后人赞“金华酥饼”道:“天下美食数酥饼,金华酥饼味最佳。”并非言过其实。 hòurénzàn“jīnhuásūbǐnɡ”dào:“tiānxiàměishíshùsūbǐnɡ,jīnhuásūbǐnɡwèizuìjiā。”bìnɡfēiyánɡuòqíshí。 金华酥饼以白面粉、雪里蕻干菜(xuělǐhónɡ ɡāncài potherb mustard)、肥肉以及芝麻、菜油、饴糖、蜂蜜等作原料,经过擀面做坯,裹馅和烘烤,制成蟹壳那么大一只酥饼,呈 Read More
