Yu-Shiang Shredded Pork (Chinese: yú xiānɡ ròu sī; 鱼香肉丝; also called fish flavored pork slices) is a common kind of Sichuan cuisine. Yú xiānɡ ròu sī is one of main traditional taste type in Sichuan. It is made of spice modulation and into.

It is named after the fish sweet flavor. Yú xiānɡ ròu sī with fish smell appears in recent decades. The creator is a chef from Sichuan in the early republic. Its “fish smell” is made of hot pepper, salt, soy sauce, white sugar, ginger, garlic and green star. This seasoning has nothing to do with Fish, instead imitating the seasoning and method, which used in Sichuan folk when they are cooking fish. That’s the name’s origin. This seasoning contains salty, sweet, sour, hot, fresh and so on, making the food more delicious.

Chengdu Tonglan (the book which give a brief introduction of Chengdu in Sichuan province) was published in 1909 and took down 1328 kinds of Sichuan food, however, it did not include the fish smell food, which stated that Yú xiānɡ ròu sī appeared after 1909.
